Chicken, broccoli cheese frittata with salad



1 chicken breast, cut to strips

200 g broccoli cut to small florets (fresh or frozen)

2 tbsp shredded mozzarella

2 tbs shredded cheddar

3 tbsp soured cream

1 whole egg

salt, black pepper


1 tsp sumac

1/2 lemon juice

1 tbsp olive oil

salt, black pepper


Baby spinach

Iceberg leaves ripped by hand

Radicchio leaves ripped by hand

Cherry tomatos, halved

3-4 tbsp vinaigrette


Butter a heatproof dish. Mix the marinade and toss the chicken strips wit it. arrenge on the bottom of the dish and bake it in the oven at 200 C for 10 minutes.

In the meantime cut the broccoli florets into small pieces, mix the two cheese and the soured cream together. Season with salt and black pepper.

Mix the ingredients to the salad in a bowl, season with salt and mixt with the dressing.

After 10 minutes take the chicken from the oven, arrange the broccoli florets on the chicken and spread the cheese mixture over them. Put the dish back to the oven and bake until it turns red.

When it is ready let it cool to room temperature and arrange on the plate with the salad.

Sumac marinated chicken breast with baby spinach-avocado salad



For one person

1 chicken breast 

2 garlic cloves

1/2 lemon juice

1 teaspoon sumac

1 tablespoon olive oil


1 handful of baby spinach

1 avocado diced

5-6 cherry tomatos halved

3 tbsp vinaigrette dressing

Cut the chicken breast into cubes or strips. Mix the marinade ingredients and rub the chicken pieces with it. Let it rest in this marinade for 30 minutes.

Heat 2-3 tbsp of oil in a pan and fry the chicken strips on both sides for 2 minutes.

Mix the salad with the dressing.

Serve, and enjoy!

Smoked chicken breast salad with sweet mango

There is no any hocus pocus with this salad. Very simple to assemble in minutes.


200 g smoked chicken breast sliced (how to smoke chicken on your stove?)

100 g Iceberg torn to pieces

100 g Radicchio torn to pieces

100 g green beans

100 g Snow peas

1 Grapefruit segments

1 can mango slices, or one fresh ripe mango

1/2 lemon or lime juice


Slice the smoked chicken breast and tear the lettuce to pieces, blanche the green beans and the snow peas al dente.

Al dente means pasta, rice or vegetables, that are cooked to be firm to the bite.

Cut the grapefruit segments over a bowl, reserve the juice.

Drain the mango slices and cut thinner slices if you like. Reserve a little juice as well.

Make the dressing.

Mix the grapefruit and the mango juice together, add 1/2 a little lemon or lime juice, season with salt and black pepper fold in green chopped coriander.

Mix together the ingredients in a bowl and pour over the dressing as much as you like.

You can keep the excess dressing in a jar in the fridge for the next day.
