Spicy minced chicken in lettuce boats

Ingredients

100 g cooked minced chicken

1-2 tbsp coconut pudding

Sweet chili sauce

Little gem leaves

Green apple

Method

Mix the cooked minced chicken with the coconut flavoured custard.

Season with salt, black pepper and sweet chili sauce.

Put one tbsp mixture in lettuce cups and garnish with apple julienne.

Enjoy!

Hot and spicy chicken breast strips with broccoli and baby spinach and avocado salad

Ingredients

1 chicken breast cut to finger size slices

2 tsp hot and spicy marinade powder

salt,black pepper, a dash of oil

Broccoli florets steamed

Salad

1 handful of baby spinach

1/2 avocado cut to pieces

2-3 tbsp sweet mustard dressing

4-5 cherry tomatos, halved

Chicken, broccoli cheese frittata with salad

Ingredients

1 chicken breast, cut to strips

200 g broccoli cut to small florets (fresh or frozen)

2 tbsp shredded mozzarella

2 tbs shredded cheddar

3 tbsp soured cream

1 whole egg

salt, black pepper

Marinade

1 tsp sumac

1/2 lemon juice

1 tbsp olive oil

salt, black pepper

Salad

Baby spinach

Iceberg leaves ripped by hand

Radicchio leaves ripped by hand

Cherry tomatos, halved

3-4 tbsp vinaigrette

Method

Butter a heatproof dish. Mix the marinade and toss the chicken strips wit it. arrenge on the bottom of the dish and bake it in the oven at 200 C for 10 minutes.

In the meantime cut the broccoli florets into small pieces, mix the two cheese and the soured cream together. Season with salt and black pepper.

Mix the ingredients to the salad in a bowl, season with salt and mixt with the dressing.

After 10 minutes take the chicken from the oven, arrange the broccoli florets on the chicken and spread the cheese mixture over them. Put the dish back to the oven and bake until it turns red.

When it is ready let it cool to room temperature and arrange on the plate with the salad.

Sumac marinated chicken breast with baby spinach-avocado salad

Ingredienrs:

For one person

1 chicken breast 

2 garlic cloves

1/2 lemon juice

1 teaspoon sumac

1 tablespoon olive oil

Salad

1 handful of baby spinach

1 avocado diced

5-6 cherry tomatos halved

3 tbsp vinaigrette dressing

Cut the chicken breast into cubes or strips. Mix the marinade ingredients and rub the chicken pieces with it. Let it rest in this marinade for 30 minutes.

Heat 2-3 tbsp of oil in a pan and fry the chicken strips on both sides for 2 minutes.

Mix the salad with the dressing.

Serve, and enjoy!

Chicken Alfredo with zucchini spagetti

I liked the pasta a’la Chicken Alfredo at the Vapiano in Soho. but I have to be careful with pasta..

Because I have a diet, I have to eat  protein with vegetables. Forone meal minimum 50 g chicken breast

In order to make it a little healthier by decreasing the amount of carbohydrates, I modified the recipe and replaced the spaghetti with vegetable.

I shredded the green and yellow zucchini and used as spaghetti.

For 4 persons you need:

200 g chicken breast diced (if you like to use more meat no problem)

1 egg white

1 teaspoon corn flour

3-5 tablespoons vegetable oil

1-2 tablespoon chopped garlic

1/2 tablespoon chopped green chili

1/2 teaspoon chili flakes

1-1 green and yellow zucchini shredded

100-150 g grated grana padano or parmesan

Instructions

First mix the chicken breast cubes with one egg white and 1-2 teaspoon of corn flour, season with salt and coarse black pepper (I love the pungency of black pepper) and let it rest for a while. Heat the 4-5 tablespoons of oil in your wok.

When it is hot add the chicken breast cubes, a small amount at one time and stir fry until it gets white. Continue until you fried all the chicken. Put all the chicken back into the wok, and add the garlic and fry for a minute or more then add the chopped green chili and the chili flakes. Season with salt and black pepper.

Turn the heat on and add the zucchini spaghetti, and fold continuously until it gets warm through. Add half the cheese and continue folding.

Scatter with chopped parsley or chopped coriander, season with salt and black pepper if it is needed.

Serve on a big plate or on individual plates scattered generously with the remaining parmesan. Garnish with fresh parsley.
