Duck escalopes in sauce bigarade

This sauce is used with wild duck or other games.  But I think it’s excellent with chicken escalopes as well.

Bigarade means seville orange.

I used seville orange marmalade instead orange juice.

Served with roasted caramelized root vegetables.

Ingredients

For the sauce

Shallots

Butter to fry

Red wine

Bay leaf

Rind and juice of an orange

Red ccurrent jelly or marmalade

Sauce demi-glace
