For one person
1 chicken breast
2 garlic cloves
1/2 lemon juice
1 teaspoon sumac
1 tablespoon olive oil
1 handful of baby spinach
1 avocado diced
5-6 cherry tomatos halved
3 tbsp vinaigrette dressing
Cut the chicken breast into cubes or strips. Mix the marinade ingredients and rub the chicken pieces with it. Let it rest in this marinade for 30 minutes.
Heat 2-3 tbsp of oil in a pan and fry the chicken strips on both sides for 2 minutes.
Mix the salad with the dressing.
Serve, and enjoy!
I need diversity in my diet, I cannot eat the same every day can I. I opened my fridge to find something to my salad. Earlier I found out that this time I will prepare a salad with savoury chicken breast pieces, avocado and pear slices, green leaves and cherry tomato. I will scatter it generously with coarse black pepper. I like the pungency of black pepper and the sweetness of fruits like mango or pear together.
Green leaves (little gems, iceberg)
1/2 avocado cubed
1/2 pear sliced
3-4 cherry tomato halved
pinch of salt
2 tbsp pear juice
1 tbsp white wine vinegar
2-3 tbsp olive oil
salt coarse black pepper
Dice the chicken breast, season with salt and black pepper. Heat vegetable oil until it’s hot. This time I fried the chicken pieces in aromatic oil. When it was hot, I added chili flakes and the chicken pieces. Fry for a minute when you see it turned white. Remove on a piece of kitchen paper to soak the excess oil.
Tear the lettuce leaves to smaller pieces and cut cherry tomatoes in half, cut the avocado to pieces and slice pear halves.
Whisk the ingredients of the dressing vigorously, season with salt and coarse black pepper.
Mixt the leaves, avocado, cherry tomato in a bowl, add the dressing and the chicken and the pear slices. Incorporate well.
Serve and enjoy!
Hmmmm, this is a very scrumdiddlyumptious thing in Austria and Hungary and in Northern Italy. You can eat this at Advent at Christmas time in front of the Schönnbrunn Palace in Vienna.
I have been living here in England for a few years, and at Advent time I visited Vienna at Christmas time in 2013. In front of the Schönnbrunn palace I found this yummy thing. Without thinking I bought a portion. It was simply unforgettable, I felt I was at home.
Like everything, which is a real treat, this is very simple too.
1 kg potato
300 g flour + dusting
2 tablespoon lard
1 whole egg
1 can prunes (pitted or unpitted)
200 g breadcrumbs
2-3 tablespoon oil
Boil the potato until it is soft, let it cool completely. Take the skin and put into a kitchen robot machine and make a mash.
Add the flour, lard a kneed the dough. On a floured surface roll into 5 mm thick, and with a pizza cutter cut 8×8 cm squares.
Put 1-2 pitted prunes in the centre, scatter with ground cinnamon if you like, and form balls.
In a pan heat the oil and add breadcrumbs and stirring continuously fry until it turns golden.
Bring water to the boil with a teaspoon of salt and 1-2 tablespoons of oil and boil the balls for more 2-3 minutes after they came to the surface. Remove them from the water with a slotted spoon onto the golden breddcrumbs and toss.
Serve on a plate and scatter with the mixture of icing sugar and cinnamon powder.
If you like extra culinary delight, try the hungarian way, and toss the boiled balls into ground blue poppy seed and sugar mixture.
This dish is perfect after a heavy one pot dish, a gulyás, a casserole or minestrone soup.
Prawn is very good protein source, zucchini can be a great partner to them.
This can be a warm salad as well.
150 g fantail prawns
1 green zucchini shredded
1 yellow zucchini shredded
1 tablespoon chopped onion
1 tablespoon ginger-garlic paste
1 teaspoon piri-piri mixture
On 2 tablespoon vegetable oil stir-fry the prawns. Add the onion and the ginger-garlic paste. Stir fry for two minutes. Scatter with chili flakes, piri-piri mixture, salt, coarse black pepper if you like and fry for a minute more.
Add the shredded zucchini and fold continuously. We don’t have to cook the zucchini, it is ready when it is hot.
You can scatter parmesan over it if you like.
Serve and enjoy hot with a glass of Gewurtztraminer.

Pineapple juice and orange juice concentrate are stirred up with lemon-lime soda and then this concoction is placed in the freezer overnight. Let it thaw right before the party and this slushy drink is ready to serve.

Because I have a diet, I have to eat protein with vegetables. Forone meal minimum 50 g chicken breast
In order to make it a little healthier by decreasing the amount of carbohydrates, I modified the recipe and replaced the spaghetti with vegetable.
I shredded the green and yellow zucchini and used as spaghetti.
For 4 persons you need:
200 g chicken breast diced (if you like to use more meat no problem)
1 egg white
1 teaspoon corn flour
3-5 tablespoons vegetable oil
1-2 tablespoon chopped garlic
1/2 tablespoon chopped green chili
1/2 teaspoon chili flakes
1-1 green and yellow zucchini shredded
100-150 g grated grana padano or parmesan
First mix the chicken breast cubes with one egg white and 1-2 teaspoon of corn flour, season with salt and coarse black pepper (I love the pungency of black pepper) and let it rest for a while. Heat the 4-5 tablespoons of oil in your wok.
When it is hot add the chicken breast cubes, a small amount at one time and stir fry until it gets white. Continue until you fried all the chicken. Put all the chicken back into the wok, and add the garlic and fry for a minute or more then add the chopped green chili and the chili flakes. Season with salt and black pepper.
Turn the heat on and add the zucchini spaghetti, and fold continuously until it gets warm through. Add half the cheese and continue folding.
Scatter with chopped parsley or chopped coriander, season with salt and black pepper if it is needed.
Serve on a big plate or on individual plates scattered generously with the remaining parmesan. Garnish with fresh parsley.
